I'm a relatively lazy blogger

But I still do enjoy blogging very much, and I promise myself and to whom ever may stumble upon my humble space, to try a bit harder on keeping the blog updated.


Anyhow, I purchased sweet potatoes (already baked) a bigger less bitter type of Brussels, onions, red and yellow bell peppers and chives. As for the smoothies, I bought two bananas, 1 jar of unsweetened soybean juice, and used half a bag of mulberries.

I'm still in Taiwan missing the oven I had back home, missing the boyfriend I have back home along with all of my friends, family, and last but certainly not in the least- my dachshund Nico bear, and so on.

Vegan home cooking in Taiwan

Tobey from the office has been bringing in some fresh vegetables she purchases from a produce market near her house, I guess vegetables are cheap now-a-days on account of the good weather Taiwan's been having, thus they've asked me to cook lunch for them so to cut down on spending for food. Here are some pictures of what we came up with using limited ingredients as well as kitchen supplies in the office kitchen...

This was the final project of our vegan feast...

Some onions &what chinese refer to as "wood ear" (a kind of fungus) stir fried together along with some soysauce.

Stir fried "A vegetables" with garlic. my favorite of leafy greens, something I believe is only grown in Taiwan... and other asian countries.

Stir fried cabbage with green onions and ginger... I loooove cabbage, yum.

Now this really is a vegetable which I cannot name, not even in Chinese, nor can the people at the office tell me exactly what it is... but it was great stir fried with garlic and green onions. Behind is broccoli stifried with some chinese chilis, so freakin good.

This was a very simple miso tofu dish, reduced miso soup cooked with tofu ginger and chives, lovely!

All of these dishes were then served with rice and voi la! A simple very health supportive vegan chinese lunch!

Easy Mac n' "Cheese"

I made a vegan mac n cheese last night... I never liked mac n cheese before I went vegan but I have a huge bag of nutritional yeast( one of my favorite ingredients) and thought I'd put it to good use. I added some things that I know makes things taste cheesy, used what I had at home and created a quick and delicious feel-good recipe. I'll share it with anyone who cares to read it : ] I've been cooking like a mad woman and should be posting more recipes;

++MAC(or other pastas) n' "cheeeeeese" with broccoli++
serves 2-3
1/2 bag of macoroni, or other pastas( I used quinoa pasta I got from wild oats,its pretty yummy and much more nutricious I definately recommend it 1.9 a box, not bad)((cheese sauce))
2-3 tbs olive oil1 tsp of salt & more to taste1 tbs nutritional yeast (tiny flakes)
1 tbs vegan mayo I used "vegenaise"
1 tbs vegan cream cheese "tofutti" is always a good brand
3 tbs vegan parmesagn
1 tsp rosemary (I didn't have any, but if you do it'd be great)
((broccoli))
1/2 bag broccoli++
1 clove garlic minced
1 tbs oil**, or pam spray (they now make organic!)
bring a pot of water to broil throw the pasta in then turn the fire to medium, let it cook till al dente.While waiting for the pasta to cook, get out a wok or pan and oil it, then put stove on high and throw in the garlic, for about 1 minute, then thrown in the broccoli , after 5-7 minutes the broccoli should be nice and ready( I like my broccoli a little burnt but I'm weird) The pasta should almost be done by this point, check by trying some... when it is, drain it and throw it in a medium sized bowl, at this point pre heat the oven to 375 degrees! put all ingredients in cheese sauce( with dry ingredients first)into the pasta then mix real well!! put in broccoli mix well and throw it in the oven after about 15-20 minutes it will be perfect. let it sit for about 2 minutes then serve and eat!!!!!


++ I used corn the second time I made this dish as well as broccoli and that was good too!that's it and yum!!
